Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at the world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service alongside his wife, Faith who is equally passionate about giving back and the service industry.     The service was top notch and overall the food was excellent. Only nitpicks we have is some of the meat was overcooked. Also this location is smaller than some other locations we had visited in the past with less options at the cold bar, so if you are expecting the massive ones you may have seen on social media this is not that. But what was there was absolutely top notch. Only advisory thing i would mention is that it is downtown Charlotte. Traffic and parking will be an issue. Make sure to plan timing accordingly. There is valet on site

    They make simple things awesome; the bread, with honey butter, is amazing. The candied bacon is phenomenal. Their steaks are cooked to perfection. It is my wife's and my favorite date night spot.

    Choplin's in Cornelius is our favorite restaurant and "go to" establishment for special occasion dinners. Last night was no exception with an outstanding dinner and exceptional service by our server, "V," who you should definitely ask for in the future. From great cocktails, to expertly prepared food, Choplin's is the place to go. Try it. You won't be disappointed.
