Our menu is inspired by the Mexican regions of Yucatán, Oaxaca, and Veracruz. We strive to respect the influences and traditions of these diverse cultures to bring you food that is uniquely El Jefe. We believe in doing things the right way. Not because it’s trendy or cool, but because it’s right. We change our menu with the grow season, supporting our neighbors and the terroir of Colorado. We are not your average Mexican joint, rather a reflection of our environment and beliefs. We hand make our tortillas every day. All of our pork comes from one whole hog. Our chefs breakdown the whole animal, for chorizo, appetizers, stocks, soups, and entrees. Nothing is wasted. We do this out of respect for the animal and for the people who raised them for us. Anything we can produce in our kitchen is done by us, with love. No frills, just good food. We do an amazing brunch on the weekends, and by default or menu is nearly 100% gluten free.

Wow! We had the best service, the ambiance is amazing, they have a great Happy Hour 3-6, including mocktails, and you can't go wrong with any of their tacos. I had the Birriaha (sp?) and my friend the pork shoulder and we were both blown away. It's no wonder this restaurant has a bib gourmand Mich Star recommendation!

This place is the best for authentic Mexico City type food. Tacos are delicious - tortillas made in house and the torta can hold up to any other torta I have ever eaten. Prices are extremely fair for food this good . And try the Paloma. Delicious!

The special fall drink list was a pleasant surprise. Yusa was quite knowledgeable and steered us well in choosing excellent appetizer and entrees. He was very personable and attentive, but didn’t hover unnecessarily. Nice date night before the show. And the restaurant validates valet parking gratis. A real perk if you are going into the Theater District!
